Greek Style Chickpea and Parsley Salad Greek-style chickpea and parsley salad
Preparation Time: 10 minutes Serves: 2

Ingredients
400g tin chickpeas , drained and rinsed
1/2 Budgens red onion, cut into thin wedges
1/4 Budgens cucumber , halved lengthways and sliced diagonally
a small bunch of Budgens flat-leaf parsley, chopped
100g feta, crumbled
a small handful of Budgens basil leaves, shredded
2 tbsp red wine vinegar
Budgens extra-virgin olive oil
Method

1. Put the chickpeas, onion, cucumber, parsley, feta and basil in a large bowl and toss well.
2. Mix the red wine vinegar with 3 tbsp extravirgin olive oil and season well.
3. Pour over the salad and toss.
