Preparation Time: 30 minutes Serves: 2

Ingredients
handful of chopped Budgens mixed herbs
50ml Budgens olive oil
200g small Budgens plum vine/cherry vine ripened tomatoes
small bunch of Budgens thyme, broken into sprigs
6 slices of Fiorucci prosciutto or Parma ham , each cut into 3 strips
100g Budgens button mushrooms
1 Budgens red onion, cut into wedges
6 wooden skewers, soaked in water for 20 minutes
Method

1. Stir the mixed herbs into the oil.
2. Wrap each tomato and a small sprig of thyme in a strip of prosciutto.
3. Thread the wrapped tomatoes, mushrooms and onion pieces alternately onto skewers.

4. Drizzle with a little oil, then grill or barbecue for 8-10 minutes until lightly golden.
