Loaded Mushroom Burgers Loaded Mushroom Burgers
Preparation Time: 20 minutes Serves: 4

Ingredients
8 Budgens large flat mushrooms, stems trimmed
Budgens olive oil
3 diced Budgens large vine tomatoes
1 Budgens mixed small chilli, finely chopped
1 Budgens garlic clove, finely chopped
1/2 small Budgens red onion, finely chopped
4 rolls, toasted
handful of Budgens leafy mix salad leaves
4 slices emmental cheese
Method

1. Heat a griddle (chargrill) pan.
2. Brush the mushrooms liberally with olive oil and season.
3. Cook both sides for 3 minutes each.
4. Mix together the tomato, chilli, garlic and onion with a slug of olive oil.
5. Build the burgers with layers of salad leaves, mushrooms and cheese, and top with tomato salsa.
