Preparation Time: 20 minutes Serves: 2

Ingredients

200g Budgens tin tuna in olive oil, drained
400g tin cannellini beans, rinsed and drained
1/2 Budgens red onion, finely sliced
handful of Budgens cherry vine ripened tomatoes, halved
small bunch of Budgens flat-leaf parsley, leaves picked
100g Budgens washed baby spinach

FOR THE DRESSING
1 Budgens lemon, zested and juiced
3 tbsp Budgens extra-virgin olive oil
1 Budgens garlic clove, crushed
1 tsp Dijon mustard

Method

1. Put all the dressing ingredients in a bowl and whisk together.
2. Flake the tuna into a bowl with the cannellini beans, red onion, cherry tomatoes and flat-leaf parsley.
3. Mix together gently, then add the spinach and toss together.
4.  Drizzle dressing over.
