Purple potato & smoked mackerel salad

All potatoes are a good source of fibre and vitamin C but purple potatoes have the added benefit of an antioxidant called anthocyanin. This produces not only their striking colour but also helps protect the heart, boosts the immune system and has anti-cancer properties.

Ingredients

  • 600g (1¼lb) purple potatoes, peeled and cut into small chunks
  • 100ml (4fl oz) soured cream
  • 2tbsp French dressing
  • Salt and freshly ground black pepper
  • 4 spring onions, trimmed and sliced
  • 1 Royal Gala apple, cored and choppedr
  • 50g (2oz) chopped walnuts or pecans
  • 3 smoked mackerel fillets, total weight about 450g (1lb), skinned and broken into small pieces
  • Rocket or lettuce, to serve

Method

  1. Cook the potatoes in a pan of boiling salted water until tender. Drain, place in a bowl. Mix the soured cream with the French dressing and pour over the potatoes whilst they are still warm. Season with salt and freshly ground black pepper and leave to cool.

  2. Add the spring onions, apple, nuts and mackerel and toss gently together just before serving.

  3. Serve with rocket or lettuce and accompany with crusty bread.


Tip

The same weight of cooked chicken, cut into strips or chunks, can replace the smoked mackerel. Perfect with Musgrave Valpolicella.††
